Recipe: Ooey gooey, oh so chewy cookies!


In this house we LOVE cookies.

Not just any cookies. They have to be ooey gooey, chewy cookies.

You know, like the ones you can buy in the supermarkets?

Only better.

Much better.

These cookies are deliciously chewy every. singly. time.

I got so fed up with the supermarket ones being so hit and miss. Sometimes they were perfectly chewy, sometimes they were so under-done they fell apart in the packet and sometimes they were hard as nails. 

Such a disappointment when they are not as you were expecting.

This recipe is foolproof and produces the perfect amount of chewiness using only four basic ingredients.

They are so quick to make up and can even be frozen in balls so you can make a big batch to grab from the freezer for freshly baked cookies any time you fancy!




Makes 12 cookies
Prep time: 15 minutes
Cooking time: 10 minutes

INGREDIENTS
125g Butter
100g Light brown sugar
125g Caster sugar
1 beaten egg
1 tsp vanilla extract
225g Self-raising flour

And whatever chocolate/ dried fruit/ nuts you want to add!

Here we used crushed Cadbury's mini eggs because we had a ton left over from Easter.

METHOD
1. Preheat the oven to 180c. 

2. Cream together the butter and sugars until light and fluffy.

4. Add the egg and vanilla extract and mix well.

5. Sift in the flour and stir into a soft dough.

6. Add your chosen chocolate/ fruit/ nut and mix in thoroughly.

7. Divide and roll into 12 equal balls and place onto a tray lined with greaseproof paper. (Make sure the balls are not too close together to allow them to spread. I normally allow 6 per tray.) 
Then flatten the balls slightly with the palm of your hands and bake for 10 minutes.

8. Once cooked, lift the greaseproof paper onto a wire rack to allow to cool flat. Do not try to remove the cookies from the paper until fully cooled.
