Review & Recipe: Slow cooked paprika pork with roasted vegeteables & Quinola


Quinoa....

Kwin-o-a? Kin-wa?

I've always struggled with what to call it. In my head it shall forever be Kwin-o-a. Even if I do now know that is incorrect.

I have to admit, I've heard it quite a lot recently. 

It seems to be the new super food on every ones lips.

But what the devil actually is it?

Apparently it is the grain-like seeds of the quinoa plant from the Andes.

Well I never, you learn something new everyday!

And what makes Quinola so special?

The Quinola mothergrain website gives 5 very valid reasons why:

1. It's super easy to cook! If you can cook rice and pasta then you can definitely cook this. And the express range is fool-proof.

2. It is super healthy. Quinoa is a complete protein that can be used to replace meat. It is gluten and cholesterol free and packed full of vitamins.

3. Great for the planet. It is sustainably organic.

4. Ethical. The farmers in Cabana are covered by the fairtrade guarantees.

5. Superior. This brand claims to be the very best in quinoa.

Quinola is a great carrier for flavours so lends itself so well to so many different sweet and savoury recipes.

The Quinola website is also packed full of yummy and imaginative recipes to use quinoa in, from Quinola fried chicken to Quinola cashew truffles.

Quinoa is also great as a simple swap for pasta or rice in meals.

As this was my first time of trying quinoa I kept things simple and used it as a straight swap for mashed potato which I am trying to avoid as part of my low GI diet.




The Quinola express pearl and black was super easy to make. Simply tear a small slit at the side and pop in the microwave for 90 seconds. As easy as that!

The colour with the black bits was a little weird at first but it did add some a new dimension to my plate full of food that's for sure. 

The taste is quite plain as rice or pasta would be but served with a flavourful dish it is perfect.

There is so much flavour going on here with the paprika pork and balsamic veg that the quinoa is great and gives a lovely crunchier texture.




For the slow cooked pork:
8 loins of pork (fat trimmed off)
1 x 400g tin of chopped tomatoes
1 tbsp worcestershire sauce
1tbsp tomato puree
1tbsp smoked paprika

Mix the tomato, Worcestershire sauce, tomato purée, chopped tomatoes and paprika. 
Cover the bottom of the slow cooker with some of the tomato mixture. Top with pork loins. Cover with more tomato mixture and then more pork loins. Layer the two until all is in the slow cooker.

Cook on low for 5-6 hours.

The pork is so yummy and literally falls of the fork.

For the roasted vegetables:
Chop your choice of vegetables quite chunky. Cherry tomatoes, courgettes, peppers, mushrooms, onions, shallots and aubergine all work well.
Pop into an oven proof dish with some chopped garlic, dried chilli flakes (optional) and olive oil and cook in the oven at 200c for 30 minutes.
Serve up and drizzle over a balsamic glaze.

*I like my vegetables roasted and still crunchy but if you want less 'faff' you can simply chuck all of your veg into the slow cooker with the pork for a one pot dish. Much better if you are out all day and want a hot meal waiting for you when you get home. All you need to do is heat the quinola for 90 seconds and serve up the pork dish.


6 year old LL loves anything involving rice, pasta or cous couse so with her pork, she tried the Mediterranean quinoa from the Quinola kids range.

This was just as easy to cook - only 30 seconds in the microwave.

It was much wetter in consistency than mine and really could be served up as a meal in itself, which is perfect for nights when you need to grab something quick for the kids that is still healthy and good for them. (Our Tuesdays are like that because LL has craft club afterschool, home for 40 minutes for dinner then straight back out the door to Rainbows!)

She loved it! It was the first thing gone from her plate. Almost as quickly as it took to cook it!

LL is much more adventurous with her foods than BB who didn't want to eat any of the meal *sigh*

  2. I do love Quinoa it's scrummy! I'm not a meat eater but I'd happily eat the veggies and quinoa whilst the restof the family have the pork. Great family recipe and certainly one that I'll be pinning! Thanks for joining us this week on #toddlerapprovedtuesday x
