Recipe: Slow cooked pulled chilli chicken


This pulled chicken recipe makes a nice change from the usual pulled pork, with a Mexican twist!

Using chicken thigh is not only much tastier but also makes this dish super cheap.

However just like the pork, the chicken thighs do need a while to cook down (this is where the slow cooker works its magic!), but in doing so, the meat really does just fall off the bone. 

This recipe serves 6-8 people but does freeze well if there are less of you.

I served mine with lettuce, tomato and pepper in a soft taco but it would also be lovely on a jacket potato on a cold winters night, with wedges or on a salad in the summer.




INGREDIENTS
8 chicken thighs, bone-in but skins removed
3 tbsp chipotle paste
1-2 tsps of crushed 'lazy' garlic
1 large onion, finely sliced
1 x 400g tin of chopped tomatoes
1/2 a tin of black beans (optional)
1 x 400g tin of  kidney beans

METHOD
1. Rub the chicken thighs with 2 tbsp of chipotle paste. 

2. Put the remaining 1tbsp chipotle paste in the slow cooker and mix in with the tomatoes, garlic, onion and some seasoning. Sit the chicken thighs on top and cook on low for 4 hours.

3. Shred the chicken off the bones  with a fork and put the meat back into the slow cooker with the beans and mix thoroughly. Cook for a further hour or two.
