Recipe: Homemade custard cream biscuits


Custard creams are my most favourite dunking biscuit ever, so I thought I'd try to make my own.

These have the same distinctive custard cream taste as shop bought ones, only nicer!!!








INGREDIENTS
For the Biscuits:
175g Softened butter
50g Golden caster sugar
2 egg yolks
2 tsp vanilla extract
300g Plain flour

For the filling:
100g Softened butter
140g Icing sugar
2 tbsp Custard Powder

METHOD
1. Preheat the over to 200c and line a baking tray with parchment paper.

2. Mix the butter, sugar, egg yolks and vanilla extract until creamy, then mix in the flour in 2 batches. Bring to a dough like consistency with your hands.

3. Refrigerate for 10 minutes then roll out thinly onto a floured surface and cut into rectangles. Lay out on the baking tray and refrigerate for a further minutes. Bake for 8-10 minutes.

4. While the biscuits cool on a wire rack, mix the butter, icing sugar and custard powder. Pipe or spread onto a cooled biscuit and sandwich together with another.

Store in an airtight container.

  5. I can't believe these are homemade, they look so professional! How'd you get biscuit written there? I love this idea as it cut out any artificial ingredients or preservatives that can come with the store bought ones. #foodpornthursdays x
