Recipe: Confetti party cakes


These little cupcakes are so easy, yet so colourful & fun - the kids love them. 

Sprinkles of rainbow confetti not only on the outside, but the inside too!

The best surprise at a party!

The 2 different cake confetti's I have used here were just 99p from B & M stores for a large tub.








INGREDIENTS

Cupcakes:
125g soft butter
125g Caster sugar
125g Self raising flour
2 eggs, lightly beaten
Cake confetti/ rainbow sprinkles

Buttercream:
240g soft butter
480g icing sugar
1 tbsp milk

To decorate:
Cake confetti/ rainbow sprinkles




METHOD

1. Preheat the oven to 180C and line a 12 hole muffin tin with cases.

2. Cream the butter and the sugar together.

3. Beat in the eggs a little at a time.

4. Fold in the flour until smooth then add a good handful of confetti.

5. Spoon into 12 cases 3/4 full and cook for 15-18 minutes, until golden and springy on top and leave to cool.

6. For the buttercream, beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth. Then add the remaining half with the milk and mix until smooth & creamy. Spoon into an piping bag and pipe swirls onto each cake.

7. Decorate with the remaining confetti sprinkles.

  1. Great idea! I do love some rainbow colour inside the cake too, they look great and a perfect surprise for kids, fantastic for a rainbow kids party (although I'm quite happy to eat them myself too). You are making me hungry with all these cakes, I must make some cakes now!

  6. I LOVE these Birthday cupcakes, especially the sprinkles - they're so colourful! But I can't seem to find these round sprinkles anywhere! Sadly they only have 100's and 1000's where I live. Bummer.
